The “compostable” bowls at Chipotle, Sweetgreen, and your favorite food hall are made with PFAS

The biggest culinary star of the past five years isn’t a chef, or a restaurant group, or the author of a cookbook. It’s a bowl, a humble piece of take-out packaging that’s taken the world of commercial foodservice by storm, rising so quickly that few have noted its troubling secret.  If you live in an American city and dine out with any frequency, you’ve almost certainly encountered one: a beige, earthy-looking receptacle, thicker than paper and thinner than cardboard, with a wide mouth and a base small enough to cradle in your palm. In a few short years, bowls like these—known as “molded fiber” bowls in the food-service sector—have become nothing short of a phenomenon. They’re the standard unit of measurement in fast-casual restaurants, which design whole menus around their proportions. They’re a staple for higher-end restaurateurs of the Caviar set, who use them to give take-out orders a touch of panache. And they’re ubiquitous in food halls, where often, no other form of plating is used. Unlike styrofoam clamshells or wax-lined soup cups, fiber products are a way to abate the guilt that comes with getting food to-go If molded fiber bowls have become a kind of status symbol in...

Liz Kirkwood, Executive Director of FLOW, is Our Great Lakes Guardian

By Liz Kirkwood on August 22, 2019 Tagged Environmental Preservation, Give Back, Live Here, Outdoors, Grand Traverse County, Traverse City This is this story of Liz Kirkwood, executive director of the nonprofit FLOW and a protector of the Great Lakes. First told at the October 2018 Fulfillament Storytelling event in Traverse City and featured in the August 2019 issue of Traverse, Northern Michigan’s Magazine. Rain pitter-patters on the glass ceiling above me. Now it’s getting louder. It’s getting so loud that I have to raise my voice to talk to my lunch companion, Henry Little, the vice president of The Conservation Fund. We’ve never had a conversation before. This one lasts for over two hours, in part because we’re having a great dialogue and in part because we are trapped inside this restaurant by the rainstorm. We talk about the Amazon in Brazil where I spent a semester in college, we talk about his Cuban wife, and we talk about his life work as a conservationist saving wilderness out West. Henry wants to know what I want to do with the rest of my life. I’m 22. I’m armed with a Bachelor in Environmental Studies and History from Williams College, and still I can’t find the pe...

A composer has given new life to an amplifier used within a historically significant particle accelerator.

A composer has given new life to an amplifier used within a historically significant particle accelerator. In May 2019, a Berlin-based, classically-trained symphony composer with a fondness for converting old scientific gear into musical instruments posted to a discussion forum: “Any nuclear scientists here? 184[-inch] cyclotron question.”  In a single photo, he presented a mystery: His latest find was a ’70s-era piece of equipment labeled a “LOCK-IN AMPLIFIER” featuring analogue displays, four dials of varying sizes, and a neat blue sticker label reading “184” CLYCLOTRON, BLDG. 80, RM. 121, EXT. 5467.” Could anyone help him find the story behind it? Stefan Paul Goetsch, who uses the name Hainbach when creating electronic music, posted the plea hoping the equipment might be traceable via the label. He had no idea that blue sticker would provide a clear connection to a major piece of scientific history.  A cyclotron is a particle accelerator that uses a circular magnet to accelerate charged particles in a spiral from its center. And, it turns out, there was just one 184-inch cyclotron: a masterpiece that cyclotron-inventor E.O. Lawrence built in the afterglow of his 1939 Nobel Pr...

I love it when an antivax “study” meant to show how “dirty” vaccines are backfires so spectacularly

I’ve frequently written about what I like to refer to as the “toxins gambit” with respect to vaccines. Basically, in the hard core (and even soft core) antivaccine crowd, vaccines are feared as being loaded with all sorts of “toxins,” such as aluminum, formaldehyde, mercury, and various chemicals that are dangerous enough separately, but, when combined, “poison” young babies, resulting in their becoming autistic, acquiring asthma and autoimmune diseases, or even dying of sudden infant death syndrome. Of course, many of the scary-sounding chemicals to which antivaccinationists point actually are in vaccines, but, as Paracelsus put it, the dose makes the poison, and the amount in vaccines is very much low enough not to pose a health threat. Also, formaldehyde is a product of normal metabolism present in the bloodstream of infants at a level much higher than what any vaccine contains. So fearful of contamination of the precious bodily fluids of their babies are antivaccinationists (and, let’s be real, it really does boil down to just that in many cases) that it’s not enough to demonize vaccines based on the harmless ingredients ...

Dragon Ball Z Collector Quits Job to Build Up Collection

Major Dragon Ball fan Hitoshi Uchida has become the Guinness World Record holder for having the largest collection of Dragon Ball merchandise. In a video posted by the Guinness World Records team, Uchida reveals that he quit his job to build his collection and to attempt to get the world record. Uchida’s Dragon Ball merchandise collection is made up of 10,098 items, the Guinness World Records team has confirmed. From a lifesize statue of Son Goku, to a Super Saiyan Goku wig and shelves upon shelves of smaller figures, Uchida’s extensive collection makes everyone else’s merch collections look small fry in comparison. However, the giant Dragon Ball fan says that it wasn’t easy to collect all of the merch, explaining that “I quit my job to attempt this record.” The Dragon Ball collector says that he has loved the Dragon Ball series since he was a child and that Son Goku’s voice helped him to overcome his fear of ghosts. Uchida has been collecting the merchandise from gacha machines since he was in high school. It may be difficult to comprehend for some, given that there are now several Dragon Ball games and series, but Uchida says that the...
